While vanilla cake is delicious, it seems that it's often given as a default when people might want something else but can't decide what that might be.

strawberry cake with cream cheese frosting
This cake is a combination of a light moist strawberry cake made with fresh pureed strawberries and frosted with home made cream cheese frosting. It is wonderful served with brunch or a big meal because it's not too heavy or sweet.

This cake is a chocolate lover's dream. The cake is baked using three different types of chocolate and then is frosted in a base layer of milk chocolate buttercreme with a partial outer layer of chocolate fudge buttercreme. Grab a glass of milk!

S'mores Cake
This cake is one of my personal favorites!
The cake is made using cinnamon and pulverized graham crackers along with the flour mixture which makes for a nice light crumb.
The layers are filled with milk chocolate buttercreme, buttery graham cracker crumbles and chocolate syrup and then the whole cake is frosted in milk chocolate buttercreme and topped with home made marshmallow toasted with my torch and topped with more buttery graham cracker crumbles and chocolate syrup!

Lemon cake
My husband's favorite! It's a light, citrusy, refreshing way to end a big meal. This cake is made using fresh lemon juice and zest, layered and filled with light fluffy white icing and lemon curd, then topped with either stabilized whipped cream or more fluffy white icing.
Chantily Cake
This is a flavor combo that I just started making so it's not technically a qualifier for this list but it belongs here. Each layer of this vanilla cake is soaked with almond simple syrup, spread with fresh raspberry compote, layered with stabilized mascarpone whipped cream, fresh berries and orange zest. The entire cake is then coated in the mascarpone whipped cream and topped with more fresh berries and orange zest.
